Ingredients
8 cups chicken broth
1 medium onion, quartered
3 carrots, peeled and cut into large pieces
3 celery ribs, cut into large pieces
1 Parmesan rind (about 2 inches)
Salt, to taste
8 oz pastina or any small pasta variety (such as orzo, acini di pepe, or alphabet pasta)
Grated Parmesan cheese, for serving
How to make Settlers Restorative Soup (Italian Penicillin)
Combine Ingredients: In a large pot with a lid, combine the chicken broth, quartered onion, large pieces of carrots and celery, Parmesan rind, and a pinch of salt. Place the pot over high heat.
Simmer: Once the mixture reaches a boil, reduce the heat to maintain a simmer. Cover the pot and let it simmer for 20 to 30 minutes, or until the vegetables are very tender.
Prepare the Vegetable Puree: Remove the Parmesan rind from the pot and discard it. Using a slotted spoon, transfer the softened vegetables to a food processor. Add a couple of ladles of the broth from the pot to the food processor. Puree the mixture until smooth.
Return Puree to Pot: Pour the vegetable puree back into the pot with the remaining broth. Stir to combine.
Cook the Pasta: Bring the broth mixture back to a boil. Once boiling, stir in the pastina or your choice of small pasta. Cook according to the pasta package instructions, or until the pasta is tender.
Final Seasoning: Remove the pot from the heat. Taste the soup and adjust the seasoning with additional salt if needed.
Serve: Ladle the soup into bowls and top each with a generous sprinkle of grated Parmesan cheese.
